Garlic Green Beans

It’s usually not easy to make make dietary changes. It can be very confusing and honestly draining to keep doing new things. I want to help guide you through that. Give yourself permission to start small and slow so that you can make changes that will stick. You’ll have a much easier time maintaining your changes if you can really get comfortable in them as you go. Maybe start with 2 or 3 healthy days a week. After a few weeks like that you can go up to 3 or 4 a week. Before you know it, you’re just living differently and you’re feeling a little excited and curious about what your labs will look like at your next medical appointment. (Maybe you’re already seeing changes on your blood sugar or blood pressure logs!) For that reason, I give you the recipe for these gorgeous green beans alongside turkey meat loaf and mashed potatoes. I want to hand this to you as a doable meal solution. These green beans are simple, delicious, and just beautiful on a plate. Just about any dinner idea you could come up with would pair well with them. Literally 15 minutes and they’re done- so fast and easy. I could honestly just make this and eat the whole pan as my meal! Whatever your intention for them, they are the perfect compliment and are just so simple. A simple recipe is the best kind in my opinion!

Garlic Green Beans

Prep Time 5 min | Total Time 15 min | Serves 6

Ingredients

  • 12 oz Fresh Green Beans
  • 1 T Olive Oil
  • 3 Garlic Cloves, FRESH minced
  • 1/4 t Salt

Directions

1. Get. It. Together.

Boil enough water in a saucepan to cover the beans. Mince the garlic. (It is actually important do use fresh garlic and mince it- not press it. The garlic will get really weird otherwise.) Trim the stems from the beans.

2. Blanch the Beans.

Blanch the beans for 4 minutes, drain, and rinse under cold water.

3. Sauté and Serve.

Heat the oil in a skillet over medium high heat. Sauté green beans and garlic for 2 minutes, until the garlic is golden and crispy. Toss with salt. Serve.
