Chicken Tortilla Soup

Looking for a crowd pleaser? Look no further! Regardless of whether you throw this together in 30 minutes or come home to it in the slow cooker, your taste buds (and your family) will thank you. Not only is this delicious, it’s likely to fit the bill for your healthy meal plan.

Now for the main event!

Chicken Tortilla Soup

Prep Time 10 min | Total Time 30 min | Serves 6

Ingredients

  • 1 1/2 lb Chicken Breast, boneless skinless (~4 breasts)
  • 1 T Olive Oil
  • 1 Yellow Onion, finely chopped
  • 1 T Chili Powder
  • 2 t Ground Cumin
  • 1 t Paprika
  • 1/2 t Ground Coriander
  • 1/2 t Salt
  • 1/4 t Black Pepper
  • 3 Garlic Cloves, minced
  • 1 Petite Diced Tomatoes (14.5 oz can)
  • 1 Corn, drained and rinsed (14.5 oz can)
  • 1 Black Beans, drained and rinsed (14.5 oz can)
  • 32 oz Chicken Broth
  • 1 T Lime Juice, fresh

For Serving (Each Bowl)

  • 2 T Tortilla Strips
  • 2 T Reduced Fat Shredded Fiesta Cheese
  • 1 T Lite Sour Cream
  • 2 T Avocado Slices
  • Cilantro, garnish

Directions (See Below for Slow Cooker)

1. Get. It. Together.

Gather and prep the ingredients.

2. Cook The Chicken

Boil the chicken until just done. Remove from water and allow to cool for at least 5 minutes before cutting into small cubes. Set aside.

3. Bloom The Flavors

Heat oil in a thick bottomed soup pot over medium heat. Saute onions until amost translucent (3-4 minutes). Stir in seasonings and garlic and stir for about 30 seconds – 1 minute.

4. Marry The Ingredients With The Flavors

Stir in the tomatoes, corn, beans and chicken. Simmer for 5 minutes.

5. Finish and Serve

Pour in the broth and allow to simmer for at least 10 minutes. Remove from heat, add lime juice and serve with or without toppings.

6. For the Slow Cooker

Toss everything (except for lime juice) into the slow cooker on low for 6 hours. Shred the chicken, add lime juice and serve!
